Crunchy Cucumber
Ingredients:
1/4 cup sliced long green beans (1/2 inch cut lengths)
1 large peeled garlic clove
1 stemmed chili pepper – add more for spice
1/2 cup halved cherry tomatoes
2 tbsp unsalted peanuts – crushed
3 cups of julienne shredded cucumber
4 oz of Som Tum Papaya Sauce
½ cup pork rind (optional)
Preparation:
Place chili pepper and garlic in a large mortar and pound with pestle until the mixture is crushed and mixed. Add Som Tum Papaya Sauce and stir.
Add 3 cups of shredded cucumber, 1/4 cup of green beans, and 1/2 cup cherry tomatoes into the mortar and mix with pestle and spoon until thoroughly mixed.
If you don’t have a mortar and pestle, vigorously mix the shredded cucmber, condiments and dressing in a container and either mix or shake by hand. Top off with pork rind and crushed unsalted peanuts .
Traditional Papaya

Sweat Mango Medley

2 cup cubed pinapple
3 cups of julienne shredded green papaya
4 oz of Som Tum Papaya Sauce

Place chili pepper and garlic in a large mortar and pound with pestle until the mixture is crushed and mixed. Add Som Tum Papaya Sauce and stir.
Add 3 cups of shredded green papaya, 1/4 cup of green beans, 1 cup cherry tomatoes, 2 cups of cubed pineapple and 1 cup shredded sweet mango into the mortar and mix with pestle and spoon until thoroughly mixed.
If you don’t have a mortar and pestle, vigorously mix the papaya, shredded mango, cubed pineapple, condiments, and dressing in a container and either mix or shake by hand. Top off with pork rind.
